Choice of wine
For a robust “dark” flavour, choose a full-bodied red wine. For a “sweet” and “mellow” flavour, choose a fruity wine (fruit wine?).
Preparation
- Peel the pears and remove the core.
- Place the pears in a large pan and add the red and white wine. Top up with water until the pears are just submerged. Bring to the boil.
- Add the sugar and cinnamon and stir well.
- Let it simmer gently for about 30 minutes, stirring occasionally.
You can now continue in two ways:
- Slow stewing: Turn the heat/hob to low and stew for at least 2.5 hours until they have reached the desired softness.
- Hay box method: Place in the hay box and leave for approximately 4 hours.
