Note:
- Cornstarch mixed with 30 g water
Preparation

Whisk the marinade ingredients together and set aside.

Make sure all ingredients are cut and ready to add. Pat dry so the vegetables don’t steam.

Heat a heavy frying pan over high heat. Add a teaspoon of oil and swirl the pan to coat it completely.

Add the broccoli and fry for 2-3 minutes until bright green and just starting to char. Remove from the pan and set aside.

Add the bok choy, pepper strips and onion rings to the pan. Fry for a few minutes until the bok choy starts to wilt and the peppers start to blister. Remove from the pan and set aside with the broccoli.

Add the remaining oil and swirl the pan. Add the garlic and chicken pieces and stir until all the chicken pieces are browned. Add the marinade and stir through the chicken.

Add the fried vegetables back into the pan and stir through the marinade. If desired, add a little cornstarch with water to thicken. Add the cashew nuts, sprinkle the sesame seeds on top, garnish with the spring onion and serve.
